NV Diebolt-Vallois Blanc de Blancs Brut
100% Chardonnay from Cuis, Chouilly, Epernay and young vines from Cramant. Jacques Diebolt has been making Champagne at Diebolt-Vallois since 1959. This is one of the top artisanal, family run estates in all of the Côtes des Blanc region. For over 20 years, Jacques’ brilliant Blanc de Blancs has graced the cellars of many of the world’s most celebrated Michelin stars, including Four Seasons George V, Le Bristol, Le Crillon, and Le Pré Catalan. The French Laundry poured this by the glass (for $31!!). Once aptly described as “Grand Cru Chablis with bubbles,” this is elegant in its silky texture and complexity. Flavors of ripe citrus, apple and tangerine waft from the glass and on the palate compliment the tense structure and nuances of the wine. Pair this wine with a celebratory occasion or try it with sushi or cheese.
