2021 Château Trinquevedel Tavel Rosé

60% Grenache, 13% Clairette, 13% Syrah, 10% Cinsault, 3% Mourvèdre, 1% Bourboulenc. Vines average 32 years in age. Cold skin maceration for 12 to 48 hours in cement tank. Direct press. Alcoholic fermentation lasts 20 days in cement tank, at 17°C. Wine is aged in enamel-lined, stainless-steel tanks for 6 to 9 months. Wine does not go through malolactic fermentation.
Expressive nose with notes of little red berries. On the palate, the wine is very balanced and in line with the nose. The palate is full with a long length. Good acidity provides a tense finale. Beautiful complexity, a fine, fresh, fruity and elegant Tavel.
Food Pairing: Pair this full-bodied, dry rosé with salmon gravelax, veal with olives, delicatessen meats, white meat, simple grilled fish or topped with light sauce, spicy dishes, and Asian cuisine.
Guillaume Demoulin is the fourth generation of his family to farm the beautiful vineyards of Château de Trinquevedel. Tavel is the only A.O.C. entirely made up of rosé, which prohibits any whites or reds from wearing the label of this Southern Rhône cru. No more than sixty percent of the final blend can be made up of the noble Grenache.
