Joostenberg is a 5th generation family business situated in the Muldersvlei district between Stellenbosch and Paarl. The Myburgh family has always practiced traditional mixed farming but have expanded over the years. All the vineyards are farmed according to organic principles. They do not irrigate and have low yields for the region. They keep the winemaking as natural as possible. Most wines are fermented using natural yeasts. Fruit was sourced from two dry-farmed, organic Chenin vineyards (38 years and 30 years old) on the Joostenberg estate and another neighboring vineyard that is farmed organically. The grapes were all hand-picked, some were destemmed before being pressed and some were whole-bunch pressed. Natural fermentation occurred in stainless steel tanks at 16 to 20 degrees Celsius. Bottling took place after 3 months maturation on the lees.
