100% organic Pinot Noir. The grapes were whole-cluster pressed, settled overnight and fermented in a combination of stainless steel and neutral French Oak. Wild yeast primary fermentation followed by secondary fermentation in bottle. Aged 16 months in bottle before disgorging by hand. 12.5% Alc./Vol. The goal with this project is to make fresh sparkling wines with a savory edge. And this wine is just that. Red Apple Peel. Pomelo. Lemon Zest. This vintage is comprised mostly of Pinot Noir and a bit of chardonnay from just about every site Hammerling works with. These folks make some of the most interesting and delicious sparkling wines from California we’ve ever tried.
