2020 Filipa Pato & William Wouters Bairrada Branco 'Dinamica'
A blend of 80% Bical and 20% Arinto. The grapes are handpicked from different vineyards located on chalky clay mid-slopes with eastern orientation to the sun and a very intense Atlantic influence (only 15 km from the ocean). Biodynamically, organically, and dry-farmed. The Bical is harvested in the beginning of September, the Arinto on the other hand, matures later and is harvested 2 –3 weeks later. Vinification happens separately. Whole bunches are pressed, then fermented with indigenous yeast in temperature controlled tank, 10% is fermented in casks of French oak (500 –600 liter “pipas"). The wine matures on the lees without batonnage, and stabilizes naturally during the cold winter. The final blend is made in early springtime when the wine is stable. Alcohol is a low 11.5%.
92 points, The Wine Front."A blend of bical and arinto, separately fermented (naturally) from fine vines of the biodynamic persuasion. Left on lees too. Filipa Pato is a female vigneron at the cutting edge in Portugal. Straight outta Bairrada DOC. Textural white of great freshness and interest, lovely saline/salted cashew characters, preserved lemon, a touch of ginger, some nectarine notes. Delicious, moreish white, good light chew and succulent finish. It’s a ripping drink. Full of interest." Mike Bennie (Wine Front)”
