2020 Assuli Insolia 'Carinda'
100% Insolia, a native white grape varietal to Sicily open used to make Marsala. The fruit is all grown organically in the Mazara del Vallo region of northwestern Sicily. The soils are limestone rich and benefit from the Mediterranean climate of mild winters and breezy summers. The fruit is pressed extremely softly, followed by static clarification of the must and fermentation at controlled temperatures (16°/17°C) in stainless steel tanks. It spends 4/5 months aging in stainless steel tanks in “sur lies”, then in bottle for at least 2/3 months before release.
Tasting Notes: Fans of Sauvignon Blanc take note! This white shows off fresh aromas of citrus, pear and a hint of nectarine, with a clean, fresh mouthfeel cleansed by bright acidity and finishing minerally and with a hint of briny sea salt. Perfect with linguini and clams or any fried fish.
