100% Pinot Noir (!) from the village of Epineuil, in the far north of Burgundy a stone’s throw from Chablis. 30% whole-cluster pneumatic press, native yeast fermentation. Aged for 15 months in older barrels. Dominique’s whole-cluster, light extraction, low sulfur winemaking is fruit-driven and transparent. Rare are the pinots in Burgundy that combine such vivacity, chalkiness and sexiness. Stunningly distinct and assertive. The mid-palate is intensely mineral, and it finishes long and chalky. Smooth, fresh and delicious, with violets, lavender, and fresh red berries with a saline mineral finish. One of the best values out there in Burgundy.
