This single-vineyard wine was made using grapes that were pressed whole cluster and settled for 2 days as juice. No ML. After 2 months in bottle, the yeast had consumed the sugar, the sediment was removed, and they added back a small amount of wine and sugar to initiate a second fermentation. This amazing sparkling Albariño is a light and fresh wine with notes of gooseberry, kumquat, and stonefruit blossom. It is a fantastic aperitif wine and is guaranteed to pair well with so many favorite recipes, including fish tacos and grilled octopus!
