2018 Castellari Bergaglio “Rolona" Gavi di Gavi DOCG
100% organic Cortese from hillside vineyards in the Gavi commune, with high calcareous and chalk content. This is the classic, white soil Gavi is famous for. Harvested mid-to-late September, soft-pressed, and stainless steel fermented at a controlled temperature for 20 days, followed by roughly 3 months steel aging and 3 months bottle aging before release. Stands apart from the Fornaci for its greater textural depth and creaminess. It, too, is appealing and beautifully balanced. Hints of peach, pear and flowers wrap around the generous finish.The whites from Gavi are great with seafood and fish dishes, pasta with cream or oil-based sauces, vegetable dishes and fried food.
