2017 Lieu Dit Chenin Blanc

A combination of tank and barrel fermentation was used to produce this 100% Chenin Blanc from old vines planted in the early 80’s on very sandy soils in the Foxen Canyon District of the Santa Ynez Valley. It is tank fermented, then transferred to neutral wood for the winter then racked back to tank for a few months before bottling. 

Once pressed, the juice is then tank fermented using only native yeast. The wine overwinters in neutral oak barrels, building complexity, definition and verve. In the spring, the wine is racked back to a stainless tank prior to bottling, resulting in a fresh, mouthwatering wine.

The Chenin emerges from Happy Canyon Vineyard, where the first Chenin was planted in an appellation that is better known for its Bordeaux varieties. Justin Willett fermented the 2017 in stainless steel and aged the wine in neutral oak."
