Last time, we selected five Pinots from around the world…THIS time, we decided to feature 5 Pinots and a Syrah made by some young, extremely talented winemakers from the Santa Cruz Mountains that, we believe, are making some of the best versions of Pinot on the planet. Period. These guys are making some truly spectacular wines – and they’re beginning to garner well-deserved acclaim from some major US wine publications. These are names and wines you’ll want to know.

The Pairing

Salmon is a meaty fish that is mildly savory in flavor, making it a bit of an outlier in the fish world. Yet it is this luscious texture and earthy flavor that makes salmon such a perfect partner for Pinot. Pinot’s flavors echo and enhance the earthy, savory notes of salmon, while it’s medium-body, high acidity and moderate tannins provide the perfect balance to cut through the fattiness of the fish without overpowering its subtle flavors. Put these two pinnacles of perfection together - and you’ve got an amazing Umami Bomb!

Not Just ANY Salmon…

Fresh water king salmon from New Zealand was Awarded "Best Choice" in sustainability by the Monterey Bay Aquarium Seafood Watch. In its written report MCAS received the highest points ranking of any salmon farm in the world. In the remote high-altitude environment of New Zealand's Southern Alps is a network of waterways connecting Lakes Tekapo, Pukaki and Benmore. These lakes support New Zealand’s largest renewable hydro scheme, harnessing millions of gallons of free flowing, pure glacial water, rich in minerals and is the home to our King Salmon.

Every minute more than 2 million gallons of fresh glacial water pass through the Mt Cook Alpine Salmon (MCAS) farms creating an ever changing, thriving environment for the salmon. Born to swim, they cover the equivalent of a half marathon every day in the swift flowing currents where they grow and thrive.

These fast flows, highly oxygenated water and the distinctive touch of the seasons are all key ingredients in creating nature's finest tasting salmon.

This “simple” pairing will allow you to experience the wonders and nuance of one of Nature’s great gifts: a wine & food moment.
